In celebration of a delicious little morning nosh we did with our friend Michael from Symmetry Breakfast, we’re taking inspiration from a classic breakfast cereal to bring you our Cinnamon Toast Crunch cookie!
Cinnamon Toast Crunch is a classic American cereal made of crunchy wheat and rice squares topped with cinnamon and sugar.
For our Cinnamon Toast Crunch cookie, we take a soft sugar cookie, roll it in cinnamon sugar, and then pop crunchy bits of Cinnamon Toast Crunch cereal on top!
